Where It All Began

Three generations. One family farm in South Ottawa.

Most Wagyu which means Japanese beef is fairly new in Canada. As a Canadian family farm since 1959, we started in 2018 to grow our purebred Wagyu on our local family-run farm.

We are a dairy, cash cropping, and beef farm, and we are highly skilled in the use of genetic technology to increase the health traits and quality of life for our animals. We believe in keeping the experience pure and unique, and therefore we raise purebred Wagyu whose genetics date back to the first animals introduced to Canada in 1988.

Every animal is raised on our own land in Ontario. Every cut is vacuum sealed, labelled, and stamped with our name. If something is wrong with your order, you are calling a family, not a call centre.

Many providers in Ontario crossbreed Wagyu with Angus or Holstein to reduce their costs and go to market within 24 months. Our animals are raised on our farm for 30 months, and we finish our Wagyu on a high carbohydrate diet similar to the traditional Japanese method to create the marbling and quality sought out by local buyers.

In addition, a large portion of the feed our animals receive is based on products we grow right on our farm. In 2018, we imported full blood Wagyu genetics and built our own breeding program from scratch. Today, that herd supplies home cooks, chefs, and anyone who has tasted real Wagyu once and cannot go back.

We also raise full blood Angus for exceptional Canadian beef at a different price point.

The Breed

What Makes Wagyu Different

Wagyu's reputation comes down to one thing: marbling. Full blood Wagyu carries intermuscular fat that regular commercial beef simply does not have, and that fat behaves differently, too. It has a lower melting point than fat in conventional beef, which is part of why Wagyu feels so much richer and more tender in the mouth.

There is also a growing body of research on the fat itself. Animal science researchers studying Wagyu have found notably higher ratios of monounsaturated to saturated fatty acids compared to commercial cattle, differences that nutrition researchers have linked to more favourable outcomes for cardiovascular health than beef fat is typically given credit for.

All Our Cuts

Lineage

A Short History of Wagyu in Canada

Wagyu has a shorter history in Canada than most people assume. Breeders began registering full blood Wagyu animals in the country in the early 1990s, with the population remaining small and closely tracked for years.

Early imports were selected in Japan based on conformation and maternal pedigree rather than volume, which is part of why full blood genetics have stayed rare here. Our own herd, started in 2018, is part of that same still small lineage of full blood breeders in Canada.
